Coriander is the most difficult herb to look after as a pot herb. Too much water and it will dampen off and go black; not enough and it will irreversibly wilt and will start to want to flower.
Water coriander little but often, if required, when the surface of the compost is dry to the touch. Coriander is a rosette forming plant, so when you take the pot out of its sleeve it will naturally collapse. New leaves are produced at the base, so harvest just above this point to allow the new growth to grow on.
When preparing coriander you can use both the leaves and stalks.
